Desserts and Pastries

Description: Each class begins with a demonstration followed by a practical. We aim to produce a wide variety of classic pastry desserts and gateaux. The techniques used will involve: Mousses and handling of Gelatin, Genoise Sponge and Roulade, Fresh Yeast Doughs and Breads, Tempered Chocolate etc. Sweet and Rough Puff Pastries, Chocolate Yule Log, Baileys Mousses with PassionFruit Glaze, Xmas Chocolates, Black Forest Gateau etc.

Fee: €145 (plus €50 payable to tutor on the first night)

Duration: 10 weeks
